Three principles guide every decision made in our kitchen and dining room.
Our menu rewrites itself every two weeks. If it isn't in season, it isn't on the plate — full stop. Twelve farms within 80 miles, and we adapt based on what's actually ready to harvest.
No bought-in shortcuts. Bread bakes each morning, stocks simmer overnight, butter is churned in-house, and every ferment, pickle, and preserve carries our name on the label.
Our service is deliberate without being formal. Every front-of-house team member trains alongside the kitchen — so every guest feels genuinely cared for, not performed at.
A small, closely-knit team obsessed with getting every detail right.

Founder and creative force. Trained under three Michelin-starred kitchens before leaving London to cook the food he actually wanted to eat — seasonal, rooted, and honestly delicious.

Joined Saffron & Oak in 2016 after stints in Mumbai and Copenhagen. Her instinct for fermentation, spice, and umami has quietly shaped the flavour profile of every menu since.

Manages our 180-label cellar with a philosophy of matching wine to the producer, not just the dish. His pairings reliably surprise — always in the best possible way.

"We celebrated our twentieth anniversary at Saffron & Oak and have been comparing every restaurant we visit since against it. The braised rabbit with heritage carrots was the single best dish either of us has eaten."— Sophie & Alistair M. — Anniversary Dinner

"Marcus Ellery is doing something rarer than exceptional cooking — he's cooking with genuine conviction. Saffron & Oak doesn't chase trends; it quietly makes its own."— James Hartley — The Observer

"From the moment we walked in to the last sip of dessert wine, every detail was considered without feeling calculated. The kind of restaurant you want to keep a secret."— Clara Donovan — Guest, December 2023
