Sixteen years of cooking with intention. Every plate at Saffron & Oak begins with what's ready to harvest — not what's available from a distributor.
ABOUT SAFFRON & OAK
Where Every Season Has a Seat at the Table
We source exclusively from farms within 80 miles of our kitchen, rewrite the menu with every harvest, and cook everything from scratch — stocks, breads, pickles, preserves, and all. No convenience, no shortcuts, no compromise.
EST. 2008 · SOMERSET, UK
Started by a Chef.
Built for the Guest.
In 2008, head chef Marcus Ellery left a Michelin-starred kitchen in London with one idea: open a restaurant that felt like dinner at a friend's house — warm, unhurried, and full of food that tasted like somewhere.
Saffron & Oak opened its doors with 28 covers and a handwritten menu. Today we seat 42 guests across two intimate dining rooms, serve a seven-course tasting menu built around what our farmers harvested that week, and maintain one of the South West's most celebrated wine cellars.
Three principles guide every decision made in our kitchen and dining room.
Radical Seasonality
Our menu rewrites itself every two weeks. If it isn't in season, it isn't on the plate — full stop. Twelve farms within 80 miles, and we adapt based on what's actually ready to harvest.
From-Scratch Craft
No bought-in shortcuts. Bread bakes each morning, stocks simmer overnight, butter is churned in-house, and every ferment, pickle, and preserve carries our name on the label.
Warm Hospitality
Our service is deliberate without being formal. Every front-of-house team member trains alongside the kitchen — so every guest feels genuinely cared for, not performed at.
The Hands Behind the Plate
A small, closely-knit team obsessed with getting every detail right.
Marcus Ellery · Head Chef
Founder and creative force. Trained under three Michelin-starred kitchens before leaving London to cook the food he actually wanted to eat — seasonal, rooted, and honestly delicious.
Priya Nair · Sous Chef
Joined Saffron & Oak in 2016 after stints in Mumbai and Copenhagen. Her instinct for fermentation, spice, and umami has quietly shaped the flavour profile of every menu since.
Tom Wheatley · Sommelier
Manages our 180-label cellar with a philosophy of matching wine to the producer, not just the dish. His pairings reliably surprise — always in the best possible way.
We celebrated our twentieth anniversary at Saffron & Oak and have been comparing every restaurant we visit since against it. The braised rabbit with heritage carrots was the single best dish either of us has eaten.
